3 easy sides // Cooking with Orvil

Tonight Orvil is cooking 3 EASY SIDES, guaranteed your family & friends will love them. We almost ate all the Mac & cheese and Mashed potatoes in one bite! 

BAKED MAC N CHEESE

1 cup Elbows cooked

1 cup Velveeta cubed

1 cup cheddar cheese

1 cup cottage cheese

1 cup sour cream

2 eggs

Mix all ingredients in large bowl. Transfer to casserole dish and bake at 350 for 1 hour.

MASHED POTATOES

3 lbs potatoes peeeled cut into 1 in pieces

1 tsp salt

1 stick unsalted butter cut into pieces

1/2 cup heavy cream or half n half

1/2 cup sour cream

1/4 tsp ground white pepper 

• Step 1 Place potatoes and 1 teaspoon salt in a medium heavy-bottomed saucepan; add enough water to cover by 1 inch. Bring to a boil over high heat; immediately reduce to a simmer, and cook until potatoes are easily pierced with the tines of a fork, 20 to 25 minutes.

Step 2 Drain potatoes and return to saucepan. Place over low heat and add butter. Using a potato masher, mash butter into potatoes. Add cream, sour cream, 1 teaspoon salt, and pepper. Continue to mash potatoes until smooth and well combined. Serve immediately.

SMOKEY OVEN ROASTED CAULIFLOWER

• 1 large head of cauliflower

• 1 tbsp extra virgin olive oil

• 1-2 tsp smoked paprika

• 1 tsp sea salt

1. Place a rack in the center of your oven and preheat to 400 degrees F. Line a baking sheet with aluminum foil for easier cleanup, if desired. Pull the leaves off of the cauliflower base and cut off the lower part of the stem.

2. Cut the head of cauliflower into four quarters and then cut all florets into individual pieces trying to keep the sizes as similar as possible. Wash the florets thoroughly in a colander.

3. Place the florets in a large bowl. Add the olive oil and smoked paprika. Mix thoroughly with hands until all pieces are evenly coated.

4. Transfer florets to the baking sheet and place in the oven for approximately 30 minutes. Cooking time will vary depending on the size of your florets, it’s a good idea to keep an eye on them after about 20 minutes to make sure none of them are burning. 

5. Remove from the oven and serve warm. Enjoy!
